What is shami kebab?


  


Traditionally, Shami kababs are a combination of beef and Chana dal. Kebabs are dipped in eggs and fried.

Dish's name


The dish's name is derived from the Persian words for " dinner" and "night".  Urdu and Hindi also translate it as evening.


Tips for best results :


Make sure you cook the meat and dal mixture until all the water has completely evaporated before turning off the heat.

In case of the too wet mixture, the kababs will not hold their shape and will disintegrate during frying.



1-The food processor is the best tool for grinding.

2-Refrigerate the ground dough for the best results.

3-If you add an egg to the batter, it will not fall apart during cooking.


Here is the best chicken Shami kabab recipe 


Chicken Shami Kebab :


    


Ingredients:


Split Bengal gram.              1/2 cup

Chicken with bones.          1/2 kg

Garlic cloves.                      5 to 6

Button red chili.                  7 to 9

Bay leaves.                           2

Water.                                    2 glass

Potato.                                  2 small

Green chili.                          2

Salt.                                       1 tsp /to taste

Chopped onion.                  3 tbsp

Chopped fresh coriander 3 tbsp

Chopped mint.                    3 tbsp

Black pepper.                      1/2 tsp

Whole spice powder.         1/2 tsp

Lemon juice.                        1 tbsp

Yogurt.                                  1 tbsp


Salt.                                       1/4 tsp

Red chili powder.               1/4 tsp

Milk.                                       1 tbsp

Egg.                                       1

Oil.                                         2 tbsp


Method:


In a pan add daal, chicken, garlic cloves,

button red chili, bay leaves, water, potato, green chilies, and salt. Bring it to a boil. Cover and cook for 30 minutes until the dal is soft and the water dries. Let it cool. Separate bay leaves and discard them. Separate chicken and shred it.

Add daal mixture to the chopper and grind all ingredients very well. After grinding add shredded chicken, chopped onion, chopped mint, chopped fresh coriander in black pepper, whole spice powder, and yogurt. Mix it well. Then make kababs of the batter with your hands.

Beat egg with milk, salt, and red chili powder.

Heat oil in a frying pan, dip Kabab in a beaten egg and fry.

Chicken Shami Kabab is ready to serve with ketchup.
