Matka Biryani
Ingredients:
Saila rice. One kilo
All spices. 1 tablespoon
Salt. 2 tablespoons
Ingredients of Chicken Gravy:
Chicken. 1 and 1/2 kg
Garlic Ginger Paste. 2 tablespoons
tomato. 250 gm
Salt. 1 tablespoon
Red chilli powder. 2 tablespoons
Biryani masala. 2 tablespoons
Coriander powder. 1 teaspoon
All spice powder 1 teaspoon
Black paper. 1/2 teaspoon
Yogurt. 1 cup
Onions. 250 grams
Oil. 1 cup
Lemon juice. 2 tablespoons
Other ingredients:
Fresh coriander. 1/4 cup
Mint. 1/4 cup
Green chilli . 8 to 10
Fried onion. 3 tablespoons
tomato. 3 medium
Salt. 1/2 teaspoon
Chilli flakes. 1 teaspoon
Chatt masala . 1 teaspoon
All spice powder. 1/2 teaspoon
Black pepper. 1/4 teaspoon
Yellow food colour . As required
Method:
Wash the rice and soak for two hours. Then add salt and whole spices and bring to a boil.
Chop green coriander, mint, green pepper, tomato and mix brown onion and salt, chili flakes, pepper, all spice powder, Chatt masala . Do this step at the end otherwise the vegetables will be watery
Heat oil for chicken gravy and fry chopped onion in slices. When the onion turns brown, remove two tablespoons of onion.
Put chicken in the same onion and fry on high heat. When the color changes, add garlic and ginger and fry.
Then add tomatoes, fry and cover so that the tomatoes become soft.
Mix all the spices in the curd and add to the chicken.
Now fry well and cover with a cup of water so that the chicken is cooked.
Put a piece of foil on the pot and give it coal smoke.
Now put a tablespoon of oil in this pot first. Then add the prepared chicken. Put coriander and mint mixture on it. Then add the boiled rice. Put the yellow color of the food on the rice on one side, add the chicken gravy oil and cover with foil and cook in the pre-heated oven for 15 minutes.
